Francis Derby, a Long Island native, began his culinary journey on his grandfather’s duck farm in Patchogue and started his first job at Varney’s Restaurant at the age of 14. Over the next 20 years, he honed his craft in kitchens across Manhattan, Los Angeles, Miami, and Michelin-starred restaurants in Spain. Deeply connected to his roots, Francis celebrates his community through his food, paying homage to local producers and farmers. For him, a personal dining experience is not just about the ingredients, but also a genuine appreciation for the people behind them. Through his culinary creations, Francis Derby honors the rich heritage of Long Island and its vibrant community.
